Planning meals for the week is hard, especially when you do not have a lot of time or do not want to spend a lot of time cooking. Here are a few easy recipes that take 30 minutes or less to help you on those busy nights! I hope these recipes help take a little bit of that stress off of your shoulders! Try these quick recipes out and let me know how you like them!
Chicken Lettuce Wraps
This is a new favorite recipe of mine, It can take about 30 minutes if you are slower with prep, but should really only take about 20 minutes You just need 1 lb of ground chicken, 9oz shredded cabbage (about ½ a shredded cabbage if you do it yourself), baby carrots shredded, 2 tbsp oyster sauce, 2 tbsp soy sauce, 2 tbsp cold water, 1 tsp corn starch, 2 stalks of scallions, 2 cloves of garlic, 1 sweet onion, and lettuce cups. So easy to make and is a nice quick and healthy meal for those days where you need a quick lunch or dinner to help fuel you. These are also perfect for appetizers for larger gatherings!
Step 1: Start with prepping the sauce. Mix together the oyster sauce, soy sauce, cold water and corn starch in a bowl until it is mixed together
Step 2 (If you are shredding your own cabbage and carrots): Grab your food processor and throw about ¼ bag of baby carrots and ½ a head of cabbage and pulse it until they are shredded into tiny pieces
Step 3: Mince your garlic and chop your sweet onion and mix them into a bowl together
Step 4: Chop your scallions into a separate bowl
Step 5: Put about 1 tsp of olive oil in a wok and make sure the bottom is coated
Step 6: Throw the garlic and onion into the wok and saute until fragrant
Step 7: Put the ground chicken into the wok and cook until it is no longer pink, mincing into smaller pieces as you cook
Step 8: Once the chicken is cooked all the way through, add your cabbage and scallions and mix through
Step 9: Mix the sauce again real quick then pour into the wok, stir together
Step 10: Continue stirring until the sauce thickens a little
Step 11: Remove from heat and serve into the lettuce cups. Add a little bit of hoisin sauce on top while serving for even more flavor!

Slop ‘n Goo
This is a staple recipe for my family, so basic but so delicious. All you need ingredients wise is 1 lb of ground beef, 2 cans of whole peeled tomatoes and a box of pasta, I highly recommend elbow pasta but any shape works. This is so easy to make, and takes less than 30 minutes, perfect for those nights where you have to feed yourself and your family a quick meal before running off to activities. It is also perfect as leftovers!
Step 1: Start boiling water for your pasta
Step 2: Open your cans of the whole peeled tomatoes
Step 3: Grab your food processor or blender, whichever you have, and pour those open cans into it and puree it until it becomes a smooth sauce
Step 4: Go over to your stove and cook your ground beef, once the beef is browned drain out the grease however you typically do that
Step 5: If your water is boiling at this point, throw your pasta in to cook
Step 6: Pour the tomato sauce we made in with the ground beef, mix it together
Step 7: Add whichever seasonings you life to this sauce. I typically add salt, pepper, basil, garlic powder, and onion powder
Step 8: Turn the sauce on low to heat up as the pasta cooks, stirring occasionally
Step 9: Once the pasta is cooked toss it in with the sauce
Step 10: Serve and enjoy!

Taco Crescent Bundt Cake
This is an easy and delicious recipe that is definitely fun to make when I need a quick meal and want something different than the classic “white people” tacos. This takes about 30 minutes to make and is perfect for those busy nights. For this recipe you need 1 lb ground beef, taco seasoning, ½ cup water, 4oz of shredded cheese (about 1 cup), 2 cans of pillsbury crescent rolls (or whichever brand you like), and your go to taco toppings!
Step 1: Pre-heat your oven to 375°F
Step 2: Brown your ground beef, once it is browned, drain the grease out however you typically do that
Step 3: Mix the ½ cup of water with the taco seasoning of your choosing
Step 4: Take the taco meat off the heat and mix in the cheese
Step 5: Grab a cooking sheet and line it with parchment paper
Step 6: Open your cans of crescent rolls and arrange the triangles into a ring, almost like a “sun” shape. The dough should be overlapping
Step 7: Spoon the beef and cheese mixture onto the inner ring of the circle,
Step 8: Pull the other side of the dough triangle over the beef mixture, tucking the point under to close it up. Repeat until the ring completely covers the beef
Step 9: Throw the taco ring into the oven and bake for about 20 minutes until golden brown
Step 10: Slice and serve with your favorite taco toppings!!
